Smoked Turkey Cooking Instructions

  1. Remove the turkey fro its packaging. If the turkey is enclosed in netting, snip this off before warming the turkey.
  2. Place the turkey into the roaster pan with the breast facing up. Pour one fourth cup water into the bottom of the pan to keep the meat moist.
  3. Cover the turkey with aluminum foil by spreading a large sheet over the entire roaster pan and sealing it around the edges.
  4. Place the turkey into a 325 degree Fahrenheit oven and plan to warm the turkey between 10-15 minutes per pound. For example, if you have a 12 pound turkey, you will need to warm it between two and three hours.
  5. Check the internal temperature of the turkey after warming it for about 1 and half hours by inserting the meat thermometer into the breast. Remove the turkey from the oven when the thermometer reads 165 degrees Fahrenheit.

Prime Rib Cookings Instructions

  1. Remove the prime rib from the refrigerator 3 hours before you start to cook it. Prime rib roasts should be brought to close to room temperature before they go into the oven to ensure more even cooking.
  2. Preheat your oven to 500 degrees Fahrenheit (or the highest temp your oven reaches less than 500 degrees)
  3. Place the prime rib roast fat side up and rib bones down in a roasting pan. Insert a meat thermometer into the thickest part of the roast, making sure the thermometer isn't touching a bone.
  4. Altering browning the roast at 500 degrees therpature in the oven for 15 minutes, reduce the oven temperature to 325 degrees Fahrenheit. To figure out the total cooking time, allow about 13-15 minutes per pound for rare and 15-17 minutes per pound for medium rare.
  5. Put roast in the oven until thermometer registers 115-200 degrees for rare or 125-130 degrees for medium. (The internal temperature of the roast will continue to rise after you take the roast out of the oven.).
  6. Check the temperature of the roast using a meat thermometer 30-45 minutes before you expect the roast to be done. For example, with a 10 pound roast, you would expect 2 and a half hours of total cooking time (15 minutes at 500 degrees and 2 and one fourth hours at 325 degrees). In this case, check after 1 hour and 45 minutes of total cooking time, or 1 hour and 30 minutes after you lowered the oven temperature to 325. (A benefit of using a remote temperature is that you don't have to keep checking the roast, you'll be able to see exactly what the temperature is by looking at the thermometer outside of the oven).
  7. Once the roast has reached the temperature you want, remove it from the oven and place it on a carving board. Cover it with foil and let it rest for 30 minutes before carving. The internal temperature of the roast will continue to rise while the roast is resting.
